how do i choose a horse's specialty

When the horse is over 3 years old, there will be an option in its Competitions box to choose between Western or Classical. Click the green button of the speciality you want your horse to have.

You can change a horse's specialty until it is 5 years old (by clicking the green + next to its name, then Edit Profile); or at any age if you have a specific VIP perk and the horse is equipped with a Nyx's Pack.
You need to look at it's top 3 skills, in the Genetics tab on the horse's page, and go from there. Here's a list of the skills you need for each competition:

CLASSICAL COMPETITIONS
Gallop: Gallop, Speed, Dressage
Trot: Trot, Speed, Dressage
Show Jumping: Jumping, Dressage, Speed
Cross Country: Stamina, Dressage, Jumping
Dressage: Dressage, Trot, Gallop

WESTERN COMPETITIONS
Western Pleasure: Trot, Stamina, Dressage
Trail Class: Dressage, Trot, Jumping
Cutting: Stamina, Dressage, Speed
Barrel Racing: Speed, Stamina, Gallop
Reining: Gallop, Dressage, Stamina

So if for example you have a horse that has Stamina, Dressage and Speed as top 3 skills, I'd choose Western for that horse because Cutting competitions match these 3 skills.

Rule of thumb (but no more than that!): horses that have Dressage as best skill are usually best in Classical riding, horses with Stamina as #1 skill are usually better in Western.
