Best is to have all the benefits for hoarders, like saddles, bridles, saddle cloths and all the food.
To provide them, you need the numbers that show if you hover over them in the "Benefits for boarders' tab on the EC page.
But to show up in the list of ECs that people see when they search for an EC for their horse, you need the *double* amount of everything.
Have 3*** boxes, all with shower and trough.
Change you meadows daily, that means you also need twice as many acres of meadow than the number of your stables. Fx if you have 5 stables, you need 5 acres being 'meadow', and 5 acres laying 'fallow', and change that daily to have the best quality meadows. (Another benefit of this is that your boarders will eat from your meadow, not from your inventory ;))
Repair all your buildings often to keep them in the best possible condition.
That is what players are looking for: good quality in everything.

And last but not least: you can also board your own horses in your EC!
