why cant i use limited golden apple coats as a beginner?

It's not to do with being a new player, but rather limited coats not being available. Limited coats with low uses retire within minutes of release because they're in high demand. Even higher use limited coats of popular species (such as riding horses, riding pegasus) get used up fairly quickly.

If you're on the classic version of the game, you can go to community>directory>creations and use the filters to search currently active limited use coats. Some species do still have copies available for the limited coats, and the creation directory allows you to search them without having a specific species in your farm.
it's more like the limited coats (especially 100 copy or less ones) retire in SECONDS if not miliseconds. When the new coats come out people are literally sitting at their comp (or device they use) and ready to buy every limited coat as it's released. and a lot of people that are doing this are still not able to get them. also remember half the limited coat copies are snatched up in the same way by VIP players 12 hours before everyone else gets access.
