Is there an option to filter public coverings to show horses with an iris coat?

As far as I know, there is not.
When covering a mare, you can select for breed, name of breeder, genetic potential, purebreed or not, price, name (if you want a specific stallion), BLUP, and how high the skills should be.

If the stallion is your own, you can let him offer a covering to one of your own mares. Then click the mare's page and you will see the covering.

If it is for the chance to get Iris' Coat foals with a 30 year old mare: the mare needs to be exactly 30 years old (not 30 + 2 months or so) but the stallion can be any age above 2.5 years. He only needs to have the Iris' coat, in any of the colours (mare and stud don't have to be the same colours).
