How can I win a rosette with one of my horses?

For that, you need a horse with really high skills. At the moment, my guess is skill 1 needs to be around 8500 or higher to even see the rosette competitions.
You recognize the rosette competitions by the colourful rosette next to the name.
Check the horses that are already in it for their 3 best skills and see if your horse has higher skills before you enter it.
Bonuses can also help to give a horse a slightly better chance in competitions so you can give your horse bonuses from the store (like whip and lunge), a companion and a special coat like a Golden Apple or Iris' Coat.
You need to place first in a competition with 70% difficulty or higher.

You can access these difficult competitions by having a very high primary skill (i.e. a stamina score >8500 for cross country), but you must still have good secondary and tertiary skills to win the rosette. Because these competitions are more difficult, they cost more energy and award more Equus, attracting very skilled competitors.
