As far as I understand, the key feature of donkeys is that their GP goes down. So, how do some breeders reverse the process?

It used to be reversible, due to a loophole some breeders used shortly after donkeys first came onto the game, but the loophole was fixed and this isn't possible anymore. You can purchase some higher GP donkeys to breed, but the following generations' GP will continue to go down, as it should.
