How to know which skills to increase and decrease for beach rides? I'm trying to win rosettes. Should I raise the main skill or the other 2?

I usually increase the "supporting" skills that are needed in a competition, and not the main skill that determines the competition level. Make sure the horse's main skill level already qualifies for competitions that qualify for rosettes. I decrease skills that are outside of those 3 skills for that particular competition type.
Typically yes you want to increase the main skill needed for the comp you want to enter, and take away from the lowest skill.
That's hard to say without seeing your horse's skill levels, so I'd recommend posting in gameplay with a link to the horse.
