Does a horse with starry aura turn itself into a random divine from the category or do you choose which one it turns into?

It doesnt do either. It collects fragments for a random Divine in the series it represents every 5 gold cups it wins (it gets a gold cup for the first 1st place it gets in a comp on a day so roughly every five days you'll get 25 fragments). In total, it will win you a total of 1000 random fragments for the series it represents.
To add: from the Maori Starry Aura page (https://www.howrse.com/marche/noir/object?qName=star-aura-maori), I read this.
Choose the horse you want to put the Starry Aura on, train it as normal until it is 3 years old. Then put on the Starry Aura and it's training will be completed automatically.
Your horse turns into a new breed, called Star. It can't breed anymore, it can't be sold anymore. It becomes immortal (gets a P Stone).
From that moment on, it's Starry course starts. Like the other answer says, you need to win 1 comp a (human) day. After 5 wins, you get 25 random Maori fragments. One day it'll be 25 Rongo fragments, the next time it could be 25 Punga fragments.

For example with the Maori Starry Aura: there are 10 Maori divines, so at the end of your horse's Starry course, you will end up with 100 fragments for each of them. It will not win you a divine, but it sure helps if one of the divines from the series gets back in a Luck item, because you'll have a little headstart.
